The fruits take about 7 months to mature and are gathered by hand once they're fully ripe and red-purple in color.
Once washed and dried, our 2nd generation artisan coffee wizard out here on Maui freshly roasts the beans. He roasts them in small batches by hand so they turn out perfect every single time.
This brings out the complex flavors of the oils and compounds within the bean which improves the balance and depth.
The medium roast allows for a sweeter and lighter cup so you don't need to add sugar.
You'll notice it has a subtle, medium body with very subtle notes of orange and an undertone of bittersweet chocolate.
I recommend you try the sample I send by itself in a pour-over fashion, but try a French press if you want to really experience the richness of flavor and velvety body.
